Fillet of Pork with a grain mustard sauce on garlic sauté potatoes

Ingredients

  • 400g pork fillet
  • 3 gloves garlic, crushed
  • 2 shallots, finely chopped
  • 1 tbsp mustard
  • ½ glass red wine
  • 2 tbsp milk powder (Regilait)
  • 2 Knobs butter
  • 2 medium sized potatoes
  • 2 gloves garlic
  • 1 red pepper

Method

Clean the pork fillet from any fat and cut into thick rounds. Season well with salt and pepper and grill on both sides on an oiled griddle pan. Finish cooking the pork in the oven at 180°C for approx. 10 minutes or until cooked through. Meanwhile in the same pan heat a knob of butter and on low heat and sauté the chopped shallot and crushed garlic for 3 minutes. Add in the mustard and wine and reduce by half.  Finally whisk in the milk powder and another knob of butter. Meanwhile crush 2 gloves garlic, slice the potatoes and sauté in little oil and butter on low heat until browned from both sides. Cut the pepper in fingers and place into the same pan and cook with the potatoes till soft. To serve, drizzle the mustard cream onto 2 serving plates and pile the potatoes and peppers on top. Place a piece of pork fillet on the center and serve.

Method

Naddaf il-flett tal-majjal mix-xaħam u qatta’ fi flieli tondi ħoxnin. Ħawwar sew bil-melħ u l-bżar u ixwi fuq iż-żewġ naħat f’taġen gradilja midluka biż-żejt. Spiċċa sajjar il-majjal fil-forn f’temperatura ta’ 180°C għal madwar 10 minuti jew sakemm isir. Sadanittant, fl-istess taġen saħħan ftit butir u fuq nar baxx, qalli l-basla mqattgħa u t-tewm għal 3 minuti. Żid il-mustarda u l-inbid u rriduċi bin-nofs. Fl-aħħar inkludi t-trab tal-ħalib u ftit ieħor butir. Sadanittant, għaffeġ 2 sinniet tewm, qatta’ il-patata fi flieli u qalli fi  ftit żejt u butir fuq nar baxx sakemm jiħmaru miż-żewġ naħat. Qatta’ l-bżar ikkulurit mit-tul u poġġi fl-istess taġen u sajjar mal-patata sakemm tkun ratba. Biex isservi, xerred il-krema tal-mustarda fuq 2 platti u poġġi l-patata u l-bżar fuqha. Poġġi biċċa flett tal-majjal fiċ-ċentru u servi.
