Fresh tomato and mozzarella salad

Ingredients

  • 6 cherry tomatoes
  • 2 flat tomatoes
  • 100g mixed lettuce
  • 10ml olive oil
  • Salt and pepper
  • 1 ball mozzarella
  • 20g nuts
  • 1 onion
  • 1 clove garlic

Method

Cut the cherry tomatoes in half and bake in oven with a dash of olive oil and freshly crushed peppercorns cook for 3 minutes .Meanwhile, peel and deseed the flat tomatoes and dice pieces to use for the dressing. Add the olive oil salt, pepper and a little vinegar and mix together well. In a separate bowl, mix together the lettuce and the baked cherry tomatoes. Add some dressing and place in serving dish. Arrange the mozzarella and serve.
