Festive pitta Based open sandwich

Ingredients
- 200g beef ribeye
- 200g lamb shoulder
- 1 tbsp mixed spice
- 1 tbsp smoky paprika
- 3 tbsp hummus (Camel Brand)
- Small bunch rocket leaves
- 80 feta cheese
- 2 tbsp cranberry sauce,
- 1 red onion
- 2 tbsp sugar
- 40g parmesan shavings
- 2 pitta bread (B-Free)
- 12 small fancy toothpicks
Method
Dice the beef and lamb in 12 cubes, mix the beef in paprika and the lamb in mixed spice put each piece of meat on a separate toothpick and grill. Slice the onion and saute with the sugar until caramelized. Spread one of the pitta with cranberry saute and spread the onion on, sprinkle the rocket on than insert the beef skewers around the outside, finish with the parmesan and cut the 6 segments. Spread the other pitta with hummus, sprinkle with rocket, insert the lamb around the outside and finish with crushed feta cheese.
