Egg less milk powder cake with mango salsa

Ingredients

For the salsa

  • 175g frozen mango
  • zest or an orange
  • 250g mango juice
  • 40g honey

For the cake

  • 120ml milk
  • 120ml water
  • 120ml plain yogurt
  • 210g plain flour
  • 100g milk powder (Regilait)
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp oil
  • 150ml sugar
  • 2 tsp vanilla extract
  • 1 tbsp. white vinegar
  • 2 tbsp. chopped almonds
  • You will also need fresh mint to decorate

Method

For the salsa, blitz together the ingredients to a smooth puree and chill. Meanwhile to make the cake grease and flour a large loaf tin. In a large bowl, lightly whisk together the milk, water and yogurt. Add the flour, milk powder, baking powder, bicarbonate and whisk. In another bowl, mix together the oil, sugar, vanilla and vinegar and add half to the flour mixture and mix. Fold in the remaining half and mix together well. Spoon the mixture into the prepared tin, sprinkle over the chopped almonds and bake at 160°C for 40-45 minutes. Cool completely before serving in slices with the mango salsa and fresh mint leaves.

  • nagħniegħ frisk

Method

Għaz-zalza, ħawwad flimkien l-ingredjenti kollha f’purée u kessaħ. Sadanittant, biex tagħmel il-kejk, idlek u itfa’ ftit dqiq f’landa kbira tal-ħobż. Fi skutella kbira, ħawwad flimkien il-ħalib, l-ilma u l-jogurt. Żid id-dqiq, it-trab tal-ħalib, it-trab tal-ħami u l-bikarbonat u ħawwad. Fi skutella oħra, ħallat flimkien iż-żejt, iz-zokkor, il-vanilja u l-ħall u żid nofs mat-taħlita tad-dqiq u ħawwad. Żid fin-nofs it-taħlita li jifdal u ħawwad sew flimkien. Ferra’ t-taħlita fil-landa ppreparata, roxx fil-wiċċ il-lewż imqatta’ u aħmi f’temperatura ta’ 160°C għal 40-45 minuta.
