Earl grey tea soaked fruit cake

Ingredients

  • 150g dried cranberries
  • 150g dried apricots, chopped
  • 125g sultanas
  • 85g candied peel
  • 1 orange, juice and rind
  • 150ml hot Earl grey tea
  • 175g caster sugar
  • 175g margarine (Stork)
  • 3 eggs (Le Naturelle)
  • 175g self raising flour
  • 90g ground almonds
  • 100g melted white chocolate

Method

Start this recipe by soaking ¾ of the dried fruit with the orange zest and rind and the hot  Earl grey tea in advance for  2 hours or overnight. Mix together the sugar with the margarine, then mix in the eggs one at a time adding in a tbsp. of the ground almonds with each addition. Fold in the remaining ground almonds, flour and finally the prepared fruit.  Spoon into a greased and lined 20cm cake tin and bake at 160°C for 1 hour-1 hour 15 mins. When ready, cool down before removing from the tin. Cover with the melted chocolate and decorate with the reserved fruit.

Ibda din ir-riċetta billi xxarrab tliet kwarti tal-frott imnixxef u l-qoxra tal-larinġa fit-te Early Grey sħun għal sagħtejn jew ħallih matul il-lejl. Ħallat iz-zokkor flimkien mal-marġerina, imbagħad, żid u ħallat il-bajd waħda waħda u żid ukoll mgħarfa lewż mitħun ma’ kull bajda. Żid il-bqija tal-lewż mitħun, id-dqiq u fl-aħħar il-frott ippreparat. Poġġi ġo landa tal-kejk ta’ 20ċm midluka bix-xaħam u miksija u aħmi f’temperatura ta’ 160°C għal siegħa  jew l-aktar sa siegħa u ħmistax-il minuta. Meta tkun lesta, berred qabel ma tneħħi mil-landa. Għatti biċ-ċikkulata mdewba u ddekora bil-frott li fadal.
