Deep fried almond crusted gbejna salad with fig preserve

Serves:

Ingredients

2 large white ġbejniet (Hanini)
1 tbsp flaked almonds
3 tbsp breadcrumbs (Lamb brand)
Salt and pepper to taste
2 eggs, beaten (Coccodi)
100g Greek cheese (Emborg)
2 tbsp plain flour
Vegetable oil for frying
You will also need
2 tbsp fig preserve (Mackays)
1 handful mixed salad leaves
Fresh figs or berries to decorate

Method

Start by cutting the 2 gbejniet in half horizontally and the greek cheese. Mix together the almonds and breadcrumbs. Also, season the flour with salt and pepper. Dip the 4 gbejna pieces into the flour, then beaten eggs and finally into the flaked almond mixture. Double coat if you want to, then deep fry quickly in hot oil till golden brown. Serve on a dressed salad with the fig preserve on the side and fresh cut figs or berries.
