Cucumber bites with dilled cream and prawns

Ingredients

  • 1 long straight cucumber, cut into 2cm pieces
  • 200g plain cream cheese
  • 1 tbsp chopped fresh dill
  • 1 tsp finely grated lemon zest
  • 20 cooked tiger prawns
  • Paprika and extra dill to decorate

Method

Start this recipe by removing the cucumber middle using a melon baller or teaspoon to create a cup. Place onto a serving tray. Mix together the cream cheese, chopped dill and lemon zest and pipe into the middle of the cucumber cups. Place a cooked tiger prawn on top and dust with a little paprika. Decorate the top with a small piece of fresh dill.
