Creamy coconut and mango pork stew

Ingredients

  • 400g pork fillet, cut into cubes
  • 1 tbsp. smoky paprika
  • 1 tbsp. curry powder
  • 1 tsp red curry paste
  • 1 tbsp. cumin powder
  • 2 tsp ginger paste
  • 8 whole cloves
  • 1 tbsp. oil
  • 1 medium sized onion, diced
  • 3 gloves garlic, chopped
  • 100g  frozen mango
  • 2 tbsp. sugar
  • 2 bay leaves
  • ½ glass white wine
  • 150ml coconut milk
  • 3 tbsp. desiccated coconut (Lamb brand)
  • 120g  Jasmine rice
  • 50g sesame oil
  • 2 tbsp. sesame seeds
  • Salt and pepper

Method

In a large bowl, mix together the paprika, curry powder, ginger paste, curry paste, cumin and cloves. Add in the pork and mix around to coat all over. Allow to sit for 30 minutes to infuse. Heat the oil, in a large pan, add the onion and garlic and sauté to brown. Add the mango and sugar and cook for a few minutes until caramelized. Splash in the white wine, coconut milk, bay leaves and coconut and simmer till reduced.

Meanwhile, rinse the rice and boil until cooked through. Drain and mix in the sesame oil, seeds and season well with salt and pepper. Serve together while hot.

  • mgħarfa trab tal-kemmun
  • 2 kuċċarini pejst tal-ġinġer
  • 3 imgħaref ġewż tal-indi mitħun
  • basla
  • 3 sinniet tewm
  • 100g mangu tal-friża
  • 2 imgħaref zokkor
  • 8 imsiemer tal-qronfol sħaħ
  • 2 weraq tar-rand
  • nofs tazza nbid abjad
  • 150ml ħalib tal-ġewż tal-indi
  • 120g ross tat-tip jasmin
  • 50g żejt tal-ġulġlien
  • 2 imgħaref żerriegħa tal-ġulġlien

Method

Fi skutella kbira, ħawwad flimkien il-paprika, it-trab tal-kari, il-ġinġer, il-pejst tal-kari, il-kemmun u t-tewm. Żid il-majjal u ħawwad sakemm tiksi l-majjal bit-taħlita tal-ħwawar. Ħallih joqgħod għal 30 minuta. Saħħan iż-żejt, ġo taġen kbir, żid il-basla u t-tewm u qalli. Żid il-mangu u z-zokkor u sajjar għal ftit minuti sakemm ikun ikkaramellizzat. Itfa’ l-inbid abjad, il-ħalib tal-ġewż tal-indi, il-weraq tar-rand u l-ġewż tal-indi u ħalliha ttektek sakemm tinxtorob ftit.

Sadanittant, laħlaħ ir-ross u għallih sakemm isir. Ixxotta u ħawwad miegħu ż-żejt tal-ġulġlien, iż-żrieragħ u ħawwar sew bil-melħ u l-bżar. Servi flimkien waqt li jkun għadu sħun.
