Cranberry brie and turkey tarts

Ingredients

  • 400g short crust pastry
  • 2 brie wheels, sliced (Emborg)
  • 2 spring onions, finely chopped
  • Few fresh thyme leaves
  • 200g chopped cooked turkey
  • 5 eggs (Coccodi)
  • 280ml single cream (Elmlea)
  • 150ml milk (Benna)
  • Mixed salad leaves for serving

Method

Start by greasing 4 fluted quiche moulds and line with the short crust pastry. Prick the bottom with a fork. Spoon over a little of the cranberry sauce into each and spread out. Cover with the Brie cheese, spring onions, chopped turkey and a few fresh thyme leaves. In a large jug, beat together the 5 eggs, milk, cream and season well with salt and pepper. Pour this mixture over the filling and carefully place into the oven. Bake at 180`c for 30-35 minutes or cooked through. Serve either warm or cold with a small dressed salad on top.
