Competition broccoli and ricotta dip

Ingredients

  • 2 large broccoli stems, diced
  • 250g ricotta
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • 2 cloves garlic
  • Few basil leaves
  • Fresh seasoning

Method

Place the diced broccoli stems into a pan of boiling water and cook until tender. Drain away the water and allow to cool completely. Place the cooked broccoli into a food processor with all the remaining ingredients and blitz together for 15 seconds to a smooth paste. Serve into a bowl with galletti and vegetable sticks on the side.
