Christmas tree cheesecake pots

Ingredients
For the base and filling
- 2 packets bourbon biscuits, crushed (Strand Palace Agency)
- 70g melted butter (Valio)
- 500g mascarpone cheese (Galbani)
- 150g icing sugar (Lamb brand)
- Finely grated zest 1 orange
- 2 tsp vanilla extract
For the berry filling
- 200g frozen mixed berries (Asiago)
- 100g caster sugar (Lamb brand)
- Juice 1 orange
- You will also need
- 6 mini terracotta pots
- Green chocolate, food colouring, sprinkles and dredges to decorate
Method
Start this recipe by making the berry jam. Place the berries, sugar and orange juice into a pan and cook together for 10 minutes. Remove off the heat and allow to cool down completely. Next, mix together the crushed biscuits and melted butter together and spoon a little into the base of each pot. Spoon over 1 tbsp. of the berry jam on top. In a medium bowl, mix together the mascarpone, icing sugar, orange zest and vanilla. You can also mix in 3 tbsp. of the prepared berry jam. Spoon this mixture into the pots and leave enough room to place another layer of the crushed biscuit mixture on top. Place the pots into the fridge to chill. Meanwhile, make the Christmas tree decorations. Melt the green chocolate (if you can`t find, just use white chocolate and add in green food coloring) Place lollypop sticks spaced apart on a tray lined with non-stick paper. Pipe over each stick with melted chocolate in the shape of a Christmas tree. Repeat the same shapes but without the lollipop stick and only half trees. Immediately decorate with coloured Christmas sprinkles and dredges and allow to cool and harden. Attach the half tree chocolate shapes to the others to form trees with 4 sides and stick into the cheesecake pots.
