Christmas Muffins

Ingredients

  • 200g dark brown sugar (Lamb brand)
  • 175g margarine (Stork)
  • 700g mixed dried fruits
  • 50g glace cherries
  • 2 teaspoon fresh grated ginger
  • Zest and juice of an orange
  • 100ml dark rum
  • 85g roughly chopped walnuts
  • 3 eggs (Le Naturelle)
  • 85g ground almonds 
  • 200g plain flour (Lamb brand)
  • 1/2tsp baking powder
  • 1tsp mixed spice
  • 1tsp cinnamon
  • 1 packet marzipan
  • Apricot jam

Method

Mix the sugar together with the margarine, dried fruits, cherries, ginger, orange zest and juice, stir everything gently over moderately low heat until sugar and margarine melt, stir in the rum and simmer for 10 minutes, stirring frequently to avoid sticking to the bottom. Set aside and cool slightly. 

Stir in the nuts, eggs and ground almonds, then follow with the flour, baking powder and spices. Mix in gently, taking care not to over beat. Divide the batter between 12 muffin cases. Bake at 150֯c for approx. 45 min. Allow cakes to cool down completely. Brush with melted apricot jam.  Cut out discs of marzipan large enough to cover the muffins and stick to the apricot jam. 

Decorate with appropriate Christmas decorations to your likings.
