Christmas fig, walnut and cranberry mincemeat

Ingredients

  • 450ml apple cider
  • 450g brown sugar (Lamb brand)
  • 450g Granny Smith apples, peeled, cored and chopped
  • 150g Vegetarian suet
  • 175 dried figs, chopped
  • 175g sultanas (Lamb brand)
  • 175g dried cranberries (Lamb brand)
  • 120g walnuts (Lamb brand)
  • 1 tsp ground mixed spice
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Zest and juice1 orange and lemon
  • 150g brandy or rum

Method

Place the cider and sugar into a large saucepan and cook together to dissolve. Add in all of the remaining ingredients except the alcohol), bring to the boil and lower the heat. Cook down for 30-40 minutes and allow to cool. Stir in the brandy or rum and spoon into sterilised jars. Allow to mature for 2 weeks before using and will last for 1 year if unopened.
