Christmas Chocolate Cake

Ingredients
- 225g Dark chocolate (Novi)
- 5 Eggs (Le Naturelle)
- Zest of an orange and a mandarin
- 25g melted butter (Valio)
- Bread crumbs
- 225g hazelnuts (Lamb brand)
- 225g walnuts (Lamb brand)
- 1 spoon vanilla essence
- 1 tot brandy
- 1 teaspoon ground cinnamon
- 200g golden caster sugar

Method
Grease a 20cm cake tin with butter and sprinkle generously with the breadcrumbs, shake off any excess.
Place the nuts in a food processor pulse into rough pieces, break the chocolate, crush into rough pieces on pulse in the food processor together with the nuts.
Transfer everything into a large bowl, mix in the zests, brandy, vanilla, brown sugar and melted butter, mix thoroughly. Whip the egg whites and fold into the cake batter. Transfer into the cake tin and bake in a pre heated oven at 170°C for approx. an hour or until a skewer comes out clean when inserted in the cake.
