Chicken with ricotta hummus with summer grilled peach and avocado salad

Ingredients

For the hummus

  • 150g ricotta (Hanini)
  • 200g tin chickpeas, drained (Fiamma)
  • Drizzle olive oil (Borges)
  • Squeeze lemon juice
  • 1 clove garlic
  • ½ tsp ras il-hanout
  • ½ tsp cumin
  • Salt and pepper to taste

You will also need

  • 2 chicken breasts, each sliced in half (SPA)
  • Salt and pepper to season
  • Good drizzle olive oil (Borges)
  • Handful rocket leaves 
  • 1 peach, sliced and grilled
  • 1 avocado, peeled and sliced
  • Good drizzle sour cream

Method

Start by blitzing together all the hummus ingredients in a food processor till smooth and creamy for 1 minute. Next, drizzle a little oil over the chicken, season with salt and pepper and grill in a pan on both sides till cooked through. To serve, spread the ricotta hummus over 2 large dinner plates and lay over the grilled chicken. Top with sliced avocado, grilled peach slices and rocket leaves. Drizzle with sour cream and serve.
