Chicken tortilla lasagna

Ingredients

  • 1tsp olive oil
  • 1 small onion, chopped
  • 200ml béchamel sauce
  • Pinch of nutmeg
  • 400g cooked shredded chicken  (Dewfresh)
  • 100g cooked spinach (frozen)
  • Salt and pepper
  • 250g ricotta Cheese
  • 2 eggs
  • 4 tbsp. grated Parmesan    This was only in method, I added it
  • 1 tbsp. fresh parsley
  • 4 tortillas
  • 200g grated mozzarella.

Method

Fry the onion with the olive oil, then add the béchamel and nutmeg. Bring to the boil, remove off the heat. Add in the shredded chicken, cooked spinach and season to taste. Allow to cool.. In a separate bowl, combine the ricotta, eggs, 1 tbsp. Parmesan and parsley. Using a round baking tin, place a tortilla at the bottom and top it with the chicken sauce. Sprinkle some parmesan on top and place a tortilla. Make a layer with the ricotta mixture and cover with another tortilla. Repeat this process ending with a layer of béchamel/chicken sauce. Top everything with mozzarella and some freshly ground pepper. Cover with foil and bake in a preheated 220°c oven for 20-30 minutes. Uncover and bake for further 15 minutes or until the top is nicely brown.

  • 400g laħam tat-tiġieġ imsajjar
  • 4 tortillas
  • kuċċarina żejt taż-żebbuġa
  • basla żgħira
  • 200ml bexamella
  • 100g spinaċi msajra (tal-friża)
  • 250g irkotta
  • 2 bajdiet
  • tursin frisk
  • niskata noċemuskata
  • 200g mozzarella maħkuka
  • melħ u bżar

Method

Aqli l-basla fiż-żejt taż-żebbuġa, imbagħad żid il-bexamella u n-noċemuskata. Ħallih jagħli, neħħi minn fuq in-nar. Żid it-tiġieġ imqatta’, l-ispinaċi msajra u ħawwar bil-bżar u melħ. Ħallih jiksaħ. Fi skutella separata, għaqqad l-irkotta, il-bajd, mgħarfa parmiġġjan u t-tursin. Ġo landa tal-ħami tonda, poġġi t-tortilla fin-naħa ta’ isfel u fuqha z-zalza tat-tiġieġ. Roxx ftit parmiġġjan fuq u poġġi tortilla oħra. Agħmel saff bit-taħlita tal-irkotta u għatti b’tortilla oħra. Irrepeti dan il-proċess u spiċċa b’saff ta’ bexamella u zalza tat-tiġieġ. Għatti kollox bil-mozzarella u ftit bżar mitħun frisk. Għatti bil-fojl u aħmi ġo forn f’temperatura ta’  220°c imsaħħan minn qabel għal 20-30 minuta. Ikxef u aħmi għal 15-il minuta oħra jew sakemm il-parti ta’ fuq tkun kannella sewwa.
