Chicken Ravioli with walnut and apple cider dressing

Ingredients

  • 1 tbsp. olive oil
  • 80g walnuts, chopped finely
  • 1 red onion, finely chopped
  • 3 gloves garlic, finely chopped
  • ½ small fennel, finely chopped
  • 330ml apple cider
  • 2 dozen fresh frozen chicken ravioli (Maypole)
  • Juice and zest of ½ lemon
  • 1 tsp thyme leaves
  • 1 knob salted butter

Method

Start by heating the oil in a large pan and fry the walnut pieces for 2 minutes. Add the garlic, onion and fennel to the pan and continue cooking for 4-5 minutes. Pour in the apple cider and simmer. Meanwhile, cook the ravioli in boiling water for 2 minutes, drain and add to the sauce, along with the juice and zest of ½ lemon, butter and thyme leaves. Toss together well and serve immediately.

Method

Ibda billi saħħan iż-żejt f’taġen kbir u aqli l-ġewż għal 2 minuti. Żid it-tewm, il-basla u l-bużbież mat-taġen u kompli sajjar għal 4-5 minuti. Ferra’ s-sidru tat-tuffieħ u ħalliha ttektek. Sadanittant, sajjar ir-ravjul f’ilma jagħli għal 2 minuti, saffi u żid maz-zalza, flimkien mal-meraq u l-qoxra ta’ nofs lumija, butir u weraq tas-sagħtar. Ħawwad sew flimkien u servi immedjatament.
