Chicken escalope Caesar salad

Ingredients
For the chicken
2 chicken breasts, cut open and hammered
1 egg, beaten
3 tbsp flour
Salt and pepper to taste
1 tsp dried oregano
1 tsp onion powder
1 tsp garlic granules
4-5 tbsp panko breadcrumbs
3 tbsp grated Parmesan
Olive oil for frying
For the dressing
2 heaped tbsp. mayonnaise (Camel brand)
1 tbsp lemon juice
1 clove garlic, crushed
1 tsp dijon mustard
2 tbsp grated Parmesan
1 tbsp olive oil
You will also need
2 handfuls chopped romaine lettuce
3 tbsp crunchy croutons
Parmesan shavings for serving
Method
Start this recipe by making the dressing. Simply blitz all the ingredients together till smooth and put aside. Next, make the chicken. Place the beaten egg in 1 large plate. In another mix together the flour, oregano, onion powder and garlic granules and season well with salt and pepper. In a third plate mix together the panko and Parmesan. To coat the chicken, first dip in the egg, then the flour, followed by the panko parmesan coating. Heat some oil in a large pan and fry the chicken on both sides for 2-3 minutes until golden and crispy. To put this dish together, place the chicken onto 2 serving plates. Mix the dressing with the romaine lettuce and croutons and place into a heat on top of the chicken. Slice over Parmesan shavings and serve.
