Chicken and sweet corn soup

Serves:

Ingredients

  • 200g sweetcorn
  • 1 litre chicken stock
  • 1 onion, finely chopped
  • 6 cloves garlic, chopped
  • 100g potatoes, diced

Method

Heat a deep pot and sauté together the finely chopped onions add garlic for 20 minutes. Add the diced potatoes and cook for 5 minutes stirring regularly. Add the chicken stock and bring to the boil, then simmer for 30 minutes. Add the sweet corn and cook for another 5 minutes. Blitz to a puree and serve.
