Chicken and mango in puff pastry

Ingredients

  • 1 large sheet pre-rolled puff pastry
  • 4 chicken roasted thighs (Dewfresh)
  • 2 tbsp. mango chutney
  • 2 slices gammon
  • 1 white goat cheese
  • 1 egg, beaten
  • 2 tbsp. milk
  • 2 large carrots, cut into matchsticks
  • 1 tbsp. sugar
  • Knob butter
  • 1 large potato, peeled and diced
  • 1 tbsp. lemon pepper

Method

Cut the pre-rolled pastry in 2 and place the gammon in the middle. Spoon over the mango chutney and cover with 2 pieces chicken thighs on each. Cut the goat cheese in quarters and place 2 pieces on each. Brush the edges of the pastry with the beaten egg and wrap up tightly into a parcel. Place onto a baking sheet, glaze the top with more beaten egg and bake in the oven at 180°C for 20-25 minutes until cooked. Meanwhile, cook the carrots in boiling water, drain and place into a pan with the sugar and butter and cook for a few minutes to caramelize. Cook the potato in salted boiling water then drain and mash with the lemon pepper and season with salt and pepper. Serve the mash on a plate with the chicken parcels cut in half and served on top.

Sadanittant, sajjar il-karrotti f’ilma jagħli, ixxotta u poġġi ġo taġen biz-zokkor u l-butir u sajjar għal ftit minuti biex tikkaramelizza. Sajjar il-patata f’ilma jagħli bil-melħ, imbagħad ixxotta u għaffeġ flimkien mal-lemon pepper u ħawwar bil-melħ u l-bżar. Servi l-maxx fuq platt bil-pakketti tat-tiġieġ maqtugħin min-nofs u servuti fil-wiċċ.
