Chicken and hummus flatbread with roasted tomatoes and avocado

Ingredients
For the flatbread
- 150g Greek yogurt
- 300g self-raising flour (Lamb brand)
- ½ tsp garlic granules
- ½ tsp oregano
- 1 tbsp olive oil
For the hummus
- 200g cooked chickpeas (Fiamma)
- 1 tbsp tahini paste
- 1 clove garlic
- 1 tbsp Greek yogurt
- 1 tsp olive oil
- Pinch chilli flakes
- Salt and pepper to taste
You will also need
- 1 chicken breast, roasted and sliced
- 1 large avocado, peeled and sliced
- 100g cherry tomatoes, roasted
- 1 tbsp fresh basil or mint pesto
- Fresh basil or mint leaves to decorate

Method
To make the flatbread by mixing together all the ingredients to make a dough and knead for a few minutes till soft. Cover and allow to rest for 15-20 minutes. When ready, roll out into a thin circle. Heat the pan with a little oil and fry the flatbread on both sides for 1-2 minutes, or until cooked through. Meanwhile, blitz together the hummus ingredients either smooth or chunky to your liking. Spread over the cooked flatbread and top with the sliced chicken and avocado, roasted tomatoes, pesto and fresh herbs.
