Cauliflower, walnut and potato gratin

Ingredients

  • 1 medium cauliflower
  • 500g potatoes, peeled
  • 150g grated Parmesan cheese (GALBANI)
  • 100g walnuts, crushed
  • 2 tbsp dry breadcrumbs (TIPIAK)

For the Bechamel sauce

  • 600ml warmed milk
  • 2 tbsp butter
  • 3 tbsp plain flour
  • 1/2 tsp grated nutmeg
  • Salt and pepper

Method

Boil the cauliflower in salted water until nearly done. Drain and cut into florets. Cut the potatoes into medium-sized slices and boil in salted water until nearly done. Drain. Meanwhile make the sauce. Melt the butter and add the flour and nutmeg. Cook over a medium heat for 1 minute while stirring. Gradually mix in the milk while stirring continuously with a whisk. Season with salt and pepper and gradually bring the sauce to the boil while whisking. Remove from heat. Grease an ovenproof dish with butter. Arrange the potatoes sprinkle over some grated Parmesan, half the walnuts and pour over half the sauce. Place the cauliflower florets, sprinkle over some Parmesan and the remaining walnuts. Pour over the remaining sauce and sprinkle over the breadcrumbs. Bake in a moderate to slightly hot oven for 45 minutes or until the top is nicely browned. Sajjar fuq nar moderat ghal minuta filwaqt li thawwad. Zid il-halib bil-mod filwaqt li thawwad sew il-hin kollu. Hawwar bil-melh u bzar u kompli hawwad sakemm iz-zalza tiftah tghali. Nizzel minn fuq in-nar. Idlek dixx tal-forn bil-butir. Poggi l-patata fil-qih, raxxax ftit gobon mahkuk, nofs il-gewz u ferrex nofs iz-zalza. Poggi l-pastard, raxxax ftit gobon mahkuk u l-kumplament tal-gewz. Ferrex il-kumplament taz-zalza umbaghad il-frak tal-hobz. Ahmi go forn moderat ghal ftit jahraq ghal madwar 45 minuta jew sakemm il-wicc jiehu kulur kannella car.
