Cauliflower fritters

Ingredients

  • 300g Cauliflower, cut into florets
  • 100g flour
  • 200ml Milk
  • 1 egg
  • 200g breadcrumbs
  • 50g grated cheese
  • season
  • 125ml iced water
  • oil for deep fry
  • salad to serve

For the cheese sauce dressing

  • 20g flour
  • 20g butter
  • 250ml milk
  • 80g cheddar cheese crumbled
  • chopped parsley
  • 50g fresh cream

Method

To make the cheese sauce, melt butter, add flour and combine remove from heat. Add the milk and whisk, dissolve. Return on heat and whisk on low heat until thick. Add cheese leave to melt and leave on the side. Cook the cauliflower in a saucepan of boiling water for 5 minutes or until just tender. Drain well and season with salt and pepper. Whisk together the egg and milk in a bowl. Prepare another bowl with flour and another with bread crumbs and grated cheese. Meanwhile pour enough oil into a large saucepan to come 1/3 of the way up the side. Heat the oil to 160`c. When the oil is ready, a cube of bread will turn golden in 30-35 seconds. Pass cauliflower from milk mix to flour back to milk mixture and into breadcrumbs make sure all is properly covered. Cook in batches for 3 min until golden brown. Use a slotted spoon to transfer pieces to a tray lined with paper towel. Make a nice plate with salad, top with the breaded cauliflower and side cheese sauce.
