Butter bean and coriander patties with crispy onions and red pepper coulis

Ingredients
For the patties
- 150g butter beans (Camel Brand)
- 1 onion
- 4 cloves garlic
- 3 tbsp breadcrumbs
- 1 tbsp chopped coriander
- 80g cheddar grated
- 1 chilly chopped
- 1 egg
You will also need
- 1 tinned red pepper
- 1/4 small fennel
- 1 celery stick
- 1/2 glass vegetable stock
- 1 tsp whole black pepper
- 2 red onions
- 50g flour
Method
To make the patties, crush all the ingredients together add seasoning than form the patties, dust in flour and shallow fry until crispy. Next, on low heat shallow fry in butter the fennel, celery, red pepper and peppercorns without browning. Add the stock simmer than blend all the ingredients together and strain. slice in onions in very thin slices toss in flour, season well and deep fry. place on a paper napkin after fried so that it adsorbs extra fat than serve on the patties, drizzled with the pepper coulis around.
