Bruscetta with sundried tomatoes, mozzarella di buffola and basil leaves

Ingredients

Sliced Maltese bread,
2 tbsp tomato paste (ROSITA)
2 balls mozzarella di buffola, chopped (GALBANI)
150g sun-dried tomatoes, chopped
2 tbsp extra virgin olive oil (PREGO)
3 cloves garlic, finely chopped
8 Fresh basil leaves, torn





Method

Start this recipe by mixing together the mozzarella, sun-dried tomatoes, olive oil and garlic in a small bowl. Season well with salt and pepper and add in the torn basil leaves. Toast the Maltese bread slices on the barbeque or under a grill and spread generously with the tomato paste. Spoon over the mozzarella mixture and decorate with more basil leaves. Serve immediately.
