Brie and caramelized onion bites

Ingredients

1 rectangular sheet pre-rolled puff pastry
2 brie cheese rounds (Emborg)
2 onions, caramelized
1 jar fig or cranberry jam (Mackays fig or cranberry)
Few sprigs fresh thyme
1 egg, beaten (Coccodi)
2 tbsp walnut halves

Method

Unroll the sheet of puff pastry and cut into 12 squares. Butter a 12 hole muffin tin and line each hole with a sheet of puff pastry. Glaze with the beaten egg. Fill each with a spoonful of the caramelized onions. Cut the Brie cheese into squares and pop 1 piece into each hole.  Crumble over some walnuts and sprinkle over a few fresh thyme leaves. Bake in the oven at 200`c for 30-35 minutes.
