Banana cup cakes with peanut butter frosting

Ingredients

For the cupcakes
  • 200g soft brown sugar
  • 125g butter (President)
  • 2 eggs
  • ½ tsp vanilla essence
  • 125gg Greek yogurt
  • 2 ripe bananas
  • 200g flour
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Fresh grated nutmeg
  • Pinch of salt
For the frosting
  • 220g cream cheese (President)
  • 100g softened butter (President)
  • 400g icing sugar
  • 150g peanut butter

Method

To make the cupcakes; cream butter, sugar and vanilla together. Gradually beat in eggs, banana and yogurt. Sieve flour, baking powder, spices and salt, fold in the butter mixture until smooth. Divide the mixture between 15 cup cake cases. Bake for approximately 18 minutes in a pre-heated oven at 175⁰c. Allow cooling before decorating. For the frosting, beat the cream cheese and butter together with the icing sugar. Finally beat in the peanut butter and use to frost the cupcakes.
