Bagels stuffed with curried chicken salad

Ingredients

  • 550g bread flour
  • 10g instant yeast
  • 2 tbsp. sugar
  • 1 tsp salt
  • Warm water (approx. 300ml)
  • 1 egg beaten
  • Sesame seeds
  • 1 bell pepper
  • 1 tbsp. oil
  • 1 tbsp. curry powder
  • 1 tbsp. mango chutney
  • 1 tsp smoked paprika
  • 1 small can pineapple cubes, drained
  • 1 chicken breast, cooked and chopped (Dewfresh)
  • 2-3 tbsp. mayonnaise
  • 1 tbsp. chopped walnuts
  • Fancy lettuce leaves for serving

Method

For the bagel dough, mix together the flour, yeast, sugar and salt with enough lukewarm water to form a soft dough. Knead well for 5 minutes then transfer into a lightly oiled container, cover with cling film and allow to prove in a warm place until double in bulk. Divide the mixture into 10 balls, roll into cigar shape and form into a ring. Place them on a lightly dusted surface, cover with a cloth and allow resting for another 10 minutes. Carefully poach the bagels in boiling water until they rise to the surface, flip them over and do the same for a few seconds more. Remove from water with a large slotted spoon and pat dry with kitchen paper. Transfer to baking sheets, brush with a beaten egg and sprinkle with sesame seeds. Bake in a hot oven temp 200°C for 20 minutes or until golden. Meanwhile, to make the chicken salad chop the bell pepper and cook with a tbsp. spoon oil for 3 minutes to soften. Stir in the curry powder and cook for a minute, followed by the mango chutney, smoked paprika and pineapple chunks. Stir in the cooked chicken, remove off the heat and allow the mixture to cool down completely before stirring in the  mayonnaise and walnuts. To serve, split the bagels and stuff with the chicken filling and salad leaves.

  • 2 imgħaref zokkor
  • kuċċarina melħ
  • Ilma sħun (madwar 300ml)
  • bajda waħda mħabbta
  • żerriegħa tal-ġulġlien
  • sider tat-tiġieġ imsajjar
  • bżaru kkulurit
  • mgħarfa trab tal-karì
  • kuċċarina paprika affumikata
  • mgħarfa ċatni tal-mangu
  • mayonnaise
  • landa żgħira kubi tal-ananas
  • kuċċarina ġewż imfarrak
  • weraq tal-insalata

Method

Għall-għaġina tal-bagel, ħallat flimkien id-dqiq, il-ħmira, iz-zokkor u l-melħ b’ilma kemxejn fietel biex tifforma għaġina ratba. Għaqqad sewwa għal 5 minuti, imbagħad ittrasferixxi f’kontenitur bi ftit żejt, għatti bil-cling film u ħalliha toqgħod f’post sħun sakemm tirdoppja. Aqsam l-għaġina  f’10 iblalen, irrombla f’forma ta’ sigarru u fforma f’ċirku. Poġġihom fuq wiċċ bi ftit dqiq, għatti b’sarvetta u ħallihom joqogħdu għal 10 minuti oħra. Sajjar b’attenzjoni l-bagels f’ilma jagħli sakemm jitilgħu fil-wiċċ, aqlibhom u agħmel l-istess għal ftit aktar sekondi. Neħħi mill-ilma b’kuċċarun kbir imtaqqab u nixxef b’karta tal-kċina. Ittrasferixxi għall-folji tal-ħami, idlek b’bajda mħabbta u roxx biż-żerriegħa tal-ġulġlien. Sajjar f’forn jaħraq f’temperatura ta’  200°C għal 20 minuta jew sakemm isiru ta’ kulur dehbi. Sadanittant, agħmel l-insalata tat-tiġieġ billi tqatta’ l-bżar ikkulurit u sajjar b’kuċċarina żejt għal 3 minuti sakemm jirtab. Żid u ħawwad il-kari u sajjar għal minuta, segwit miċ-ċatni tal-mangu, il-paprika affumikata u l-biċċiet tal-ananas. Żid u ħawwad it-tiġieġ imsajjar, neħħi minn fuq in-nar u ħalli t-taħlita tibred kompletament qabel ma tħawwad magħha l-mayonnaise u l-ġewż. Biex isservi, aqsam il-bagels u imla bil-mili tat-tiġieġ u l-weraq tal-insalata.
