Bacon and beer braised mussels with minted toast
Serves:
Ingredients
- 1kg mussels
- 300ml ale (Hopleaf Red Label )
- ½ onion
- 2 spring onion
- 1 tbsp fresh marjoram leaves
- 3 slices streaky bacon
- 1 tbsp whole grain mustard
- 1 tbsp olive oil
- 10 mint leaves
- Knob butter
- 2 slices French toast (Golden Harvest)
Method
Chop the bacon, onions and spring onion and saute in olive oil withot browning add the beer and bring to the boil simmer, add the mussels and marjoram, cover and simmer for 5 minutes tossing the pan continously. Remove the mussels from the pan and whisk in the mustard, reduce for a few more minutes and pour on the mussles.Chop the mint and mix well with the butter, spread on the toast, grill lightly and serve on the side.
