Aubergine involtini
Serves: 2

Ingredients
- 2 large aubergine
- 200g cooked couscous (Ainsley)
- 1 peppered goat cheese
- 1/2 red onion
- 200g tomato pulp
- 2 cloves garlic
- 1 tsp fresh thyme
Method
Slice the aubergines and grill until softened, add the boiling water to the couscous and cover for 5 min. Put the couscous in the middle of the aubergine slices and roll, place in an oven dish one near each other. Chop the onion, garlic and thyme and brown lightly, add the tomato pulp and simmer until thickened. Pour the tomato sauce on the aubergines and grate the goat cheese on top, finish under the grill until browned.
