Asparagus and serrano ham bundles with burrata

Ingredients

1 bunch large asparagus, trimmed
4 slices serrano ham (Casademont)
Drizzle olive oil (Borges)
Salt and pepper to taste
2 thick slices brioche bread
1 tbsp butter (Lake land)
2 balls burrata (Zanetti)
Pinch dried chilli flakes for serving

Method

Start by wrapping 2 bundles of asparagus in the serrano ham. Place onto a baking sheet, drizzle with oil and season well with salt and pepper. Roast in the oven at 200`c for just 5-6 minutes. Meanwhile, melt the butter in a large pan and toast the 2 thick slices of brioche on both sides until golden. Place onto 2 serving plates and top each piece of brioche with a bundle of wrapped asparagus and a burrata on top. Drizzle over a little extra virgin olive oil and sprinkle over the chilli flakes before serving.
