Asian-style pork and lemongrass skewers with mango and lime salad

Serves: 18

Ingredients

For the skewers

  • 600g pork mince
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 1 fresh red chilli, finely chopped
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh coriander
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp chopped lemon grass
  • 1 egg, beaten
  • Freshly ground salt
  • Wooden skewers soaked in water

You will also need

  • 1 large handful mixed salad leaves
  • 1 fresh mango, peeled and chopped
  • Few fresh coriander and basil leaves
  • 1 red onion, thinly sliced
  • 1 tbsp lemon infused olive oil
  • Juice of a lime
  • Salt and pepper
  • 2 tbsp mayonnaise
  • 1 tbsp mango chutney
  • 1 heaped tsp curry powder

Method

Start this recipe by mixing together all the ingredients for the pork skewers and season with a little salt. Roll into balls the size of a golf ball and press onto the wooden skewers. Heat a large pan with a little vegetable oil and fry the skewers for 4-5 minutes on each side till lightly golden. Meanwhile, mix together the mayonnaise, curry powder and mango chutney and place into a small serving bowl. For the salad, just mix together the salad leaves, fresh mango, red onion. Pour in the lemon oil, lime juice and season well with salt and pepper. To serve, place the salad onto a large serving slate in one corner and decoratively lay one the chicken and lemon grass skewers. Place the mango mayonnaise on the side and serve.
