Apple, cinnamon and walnut Bundt cake

Serves: 16

Ingredients

  • 400g caster sugar
  • 2 tsp vanilla essence
  • 225ml vegetable oil
  • 3 eggs
  • 2 tsp cinnamon
  • 390g plain flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 Granny Smith apples, skins on and diced
  • 160g chopped walnuts plus extra to decorate

For the honey glaze

  • 150g icing sugar
  • 2 tbsp honey
  • 2 tbsp milk

Method

Start this recipe by heavily greasing a bundt or ring cake tin. Beat together the sugar, vanilla essence, oil and eggs in a mixing bowl. Sift in the cinnamon, flour and baking powder, salt and mix to incorporate. Finally, fold in the chopped apples and walnuts. Pour the batter into the prepared cake tin and bake at 180`C for approximately 1 hour- 1 hour 15 minutes. Allow the cake to cool down completely, then mix together the glazing ingredients and drizzle over the cake. Finish off by decorating with the extra walnuts.
