Ingredients
Dough Ingredients
- 300g flour
- 200g margarine (Stork)
- 2 teaspoon white sugar
- ½ teaspoon salt
- 120g grated cheddar cheese
- 6-8 spoons cold water
Apple filling
- 5 Granny Smith Apples
- 120g grated cheddar cheese
- 50 g caster sugar
- 1 spoon brown sugar
- Zest and juice of 1 lemon
- 1 teaspoon ground cinnamon
- ½ teaspoon grated nutmeg
- 1 teaspoon corn flour

Method
Dough; Mix together the flour, sugar and salt. Rub in the cheddar and margarine into fine crumbs. Knead into a soft dough with the cold water into a soft dough.
Filling; Peel and core apples, cut into thin slices. Mix together with the grated cheddar, sugars, lemon zest and juice, spices and corn flour.
Take halve the dough and roll onto a lightly dusted surface, line a greased 20cm pie pan.
Fill with the apple mixture and press firmly. Roll out remaining pastry and cut into long strips.
Use the strips and cover the pie with a lattice. Bake at 175°C
