Penne with rabbit liver and pancetta

Serves: 2

Ingredients

  • 200g penne (Di Martino)
  • 80g salted butter (President)
  • 100g rabbit liver
  • 2 tbsp diced pancetta
  • 4 cloves garlic
  • 1 small red onion
  • 1 tsp chopped parsley
  • 15 cherry tomatoes
  • 1/2 cup cream(Benna)

Method

On a preheated pan seal from both sides the roughly cut liver and pancetta with very little oil. Lower the heat and add the chopped garlic, onion and butter to brown slowly. Once the vegetables are browned add the quartered cherry tomatoes and sauté until softened, add cooked pasta, parsley than toss and add the cream, toss constantly well and remove from heat. Serve immediately.
