Lemon and Strawberry tiramisu

Ingredients
For the cream
500ml fresh cream (Benna)
2 tbsp icing sugar
1 tsp vanilla extract
250g mascarpone cheese
250g cold custard
Zest 2 lemons, very finely grated
You will also need
1 double packet sponge fingers
400ml lemon syrup for soaking
2 shots limoncello
3 heaped tbsp. lemon curd
1 small box strawberries, hulled and chopped
Method
Start this recipe with the cream. Whip together the cream, icing sugar and vanilla to soft peaks. Add in the mascarpone, cold custard and lemon zest and whisk together. Next, soak the sponge fingers in the lemon syrup one by one and lay into the base of your serving dish. Drizzle over 1 shot limoncello. Spread over half of the cream filling and half of the strawberries. Repeat this process again using all of the remaining ingredients. Place in the fridge and chill for at least a few hours or overnight before serving.
