Chicken with ricotta hummus with summer grilled peach and avocado salad

Ingredients
For the hummus
- 150g ricotta (Hanini)
- 200g tin chickpeas, drained (Fiamma)
- Drizzle olive oil (Borges)
- Squeeze lemon juice
- 1 clove garlic
- ½ tsp ras il-hanout
- ½ tsp cumin
- Salt and pepper to taste
You will also need
- 2 chicken breasts, each sliced in half (SPA)
- Salt and pepper to season
- Good drizzle olive oil (Borges)
- Handful rocket leaves
- 1 peach, sliced and grilled
- 1 avocado, peeled and sliced
- Good drizzle sour cream

Method
Start by blitzing together all the hummus ingredients in a food processor till smooth and creamy for 1 minute. Next, drizzle a little oil over the chicken, season with salt and pepper and grill in a pan on both sides till cooked through. To serve, spread the ricotta hummus over 2 large dinner plates and lay over the grilled chicken. Top with sliced avocado, grilled peach slices and rocket leaves. Drizzle with sour cream and serve.
