Rum & raisin banana cake

Ingredients
- 120g Raisins
- 100ml rum
- 6 over ripe bananas
- 110g butter (ICBINB)
- 105g soft brown sugar (Lamb brand)
- 2 egg (Le Naturelle)
- 1 spoon vanilla extract
- 1 ½ teaspoon cinnamon
- ½ teaspoon grd nutmeg
- ½ teaspoon mixed spice
- 1 ½ teaspoon baking powder (Lamb brand)
- ½ teaspoon salt
- 220g flour (Lamb brand)

Method
Soak the raisins in the rum, leave at room temperature, preferably overnight.
Grease a loaf tin with non-stick spray or extra butter.
Drain the raisins through a strainer, reserve the alcohol.
In a large mixing bowl, mash the bananas with a fork or potato masher and stir in the melted butter. Mix in the spices and 2 spoons of the remaining rum.
Mix the salt, baking powder and flour and mix into the banana batter, fold in the raisins.
Bake at 175°C for approx. 50 minutes.
