Indian spiced burgers with spicy couscous cakes

Ingredients

  • 500g minced beef
  • 2 tbsp. korma curry paste
  • 2 tbsp. chopped fresh coriander
  • 1 egg (Le Naturelle)
  • 1 jar mango chutney
  • 1 aubergine, sliced and grilled
  • 1 grated cucumber
  • 2 tbsp. chopped fresh mint
  • 100g Greek yogurt
  • Juice of 1 lime
  • 1 packet couscous with spices (Tipiak)
  • 1 finely chopped onion
  • 100g spicy Mexican cheese
  • 2 eggs (Le Naturelle)
  • Salt and pepper

Method

Season the minced beef with the curry paste, coriander, zest of lime, salt and pepper and bind together with an egg.  Divide mixture into your desired burger sizes and grill before serving. Meanwhile, together the cucumber, mint, lime juice and Greek yoghurt to make a relish and put aside to chill. Cook the couscous according to packet instructions. Mix in the finely chopped onion, Mexican cheese and eggs. Divide and mould into patties the same size as the prepared burgers. Pan fry in a lightly greased non-stick pan on both sides till golden brown. Serve the couscous cakes topped with mango chutney, grilled aubergines, cucumber relish and the beef burgers.
