Savoury waffles with salmon, avocado and poached eggs

Ingredients
For the waffles
- 120g plain flour (Lamb brand)
- 70g semolina or polenta
- 25g corn flour (Lamb brand)
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- Salt and pepper to season
- 480g buttermilk (Schardinger)
- 2 eggs (Le Naturelle)
- 50g melted butter (Valio)
- 2 spring onions, finely chopped
- 50g shredded Cheddar cheese (Fior di Vita)
For the toppings
- 150g sliced smoked salmon
- 1 avocado, peeled and sliced
- 2 eggs (Le Naturelle)
- 3 tbsp. cream cheese (Milk)
- 1 lemon
- 1 tsp chopped capers (Vitaly)
- 1 tbsp. fresh dill plus extra to garnish

Method
To make the waffles, beat together all the ingredients (except the butter, spring onions and Cheddar) to a smooth batter, then mix in the remaining ingredients. Allow to sit from 5-10 minutes then spoon the mixture into a hot waffles maker and cook for 3-4 minutes. When ready, remove and place onto 2 serving plates. Meanwhile, poach the 2 eggs. Mix the cream cheese with 1 tsp lemon zest, 1 tbsp. chopped dill and the chopped capers and spread onto the waffles. Arrange the smoked salmon and avocado on top, followed by the poached eggs and decorate with extra dill.
