Coriander and lime chicken with avocado salsa and avocado fries

Ingredients
For the chicken
- 2 skinless chicken breasts
- 1 clove garlic, finely chopped
- 1 tbsp. chopped fresh coriander
- Juice and zest ½ lime
- Drizzle olive oil
- Salt and pepper to season
For the avocado fries
- 4 frozen avocado halves (Asiago)
- 2 tbsp. flour
- 2 tbsp. chipotle sauce
- 1 egg
- 4 tbsp. panko breadcrumbs Salt and pepper to season
- Vegetable oil for frying
For the salsa
- 2 avocado halves, defrosted and diced (Asiago)
- 1 clove garlic, finely chopped
- 1 tomato, deseeded and finely diced
- ½ finely chopped fresh chili (optional)
- 2 tbsp. olive oil
- Juice ½ lime
- Salt and pepper
Method
Start by cutting a few slits into each chicken breast just through the top. Marinate with the remaining ingredients for at least 30 minutes. Meanwhile, make the salsa by mixing all the ingredients together and put aside. To make the fries, cut the avocado into chunky slices whilst still frozen and dip to coat in the flour. Next, mix the egg with the chipotle sauce and dip in the avocado, followed by well-seasoned panko crumbs. Heat the vegetable oil till hot then very quickly fry the coated avocado fries till lightly golden. Remove and drain on kitchen paper until you pan-fry the marinated chicken breasts. To serve, place the grilled chicken onto 2 serving plates and spoon over the salsa. Place the avocado fries on the side and serve.

Method
Ibda billi tagħmel ftit qsim fil-wiċċ ta’ kull sider tat-tiġieġa. Immarina bl-ingredjenti li jifdal għal mill-inqas 30 minuta. Sadanittant, agħmel iz-zalza billi tħallat l-ingredjenti kollha flimkien u warrabhom. Biex tagħmel il-fries, aqta’ l-avokado fi flieli waqt li jkun għadu ffriżat u iksi d-dqiq. Sussegwentement, ħawwad il-bajda maz-zalza taċ-chipotle u għaddas fiha l-avokado, segwit minn frak tal-ħobż panko mħawwar sew.
