Beef stew hot pot

Serves: 4

Ingredients

  • 800g beef rump steak
  • 2 sticks of celery
  • 1 large onion, peeled
  • 2 carrots
  • 2 tbsp plain flour (Lamb Brand)
  • 1 can tomato pulp
  • Chopped fresh rosemary and thyme
  • 500ml stout (Guinness)
  • 3 large potatoes, peeled and thickly sliced
  • Fresh seasoning
  • Melted butter (President)
 

Method

Cook the peeled and roughly chopped vegetables in hot olive oil. Chop the steak into thick cubes, roll into the flour and add to brown with the vegetables. Pour in the stout and tomatoes, add the herbs, bring to the boil and set to simmer for 30 minutes. the stew into an oven proof baking dish. Cover the top with the potato slices, brush with melted butter, season with salt and pepper, sprinkle with herbs. Bake in a hot oven for 45 minutes in a hot oven.
