Strawberry and white chocolate cassatella
Serves: 8
Ingredients
For the ricotta filling
- 2 tbsp white chocolate drops
- 250g ricotta (Benna)
- 100ml fresh cream (Benna)
- 2 tbsp sugar (Lamb Brand)
- Zest of an orange
- 6 strawberries, chopped
- You will also need
- Vanilla sponge
- 1 tbsp strawberry jam
- Orange syrup for soaking
- Pink marzipan and extra strawberries to decorate
Method
Start by mixing together the ricotta filing. Mix all the ingredients together and put into the fridge. Place a thin slice of sponge into the bottom of a cake ring and soak with the orange syrup. Place over half of the ricotta filling and repeat the process again.Finish off with a 3rd layer of sponge on the top and brush with the strawberry jam. Cover the top with the rolled out pink marzipan and decorate with strawberries on top. Remove the ring and serve.
