Salmon fillets teriyaki-style with noodles
Serves: 2
Ingredients
For the salmon
- 2 salmon fillets, each cut into 2 squares
- 1 tbsp oil
- 1 small green chilli, finely chopped
- 2 cloves garlic, finely chopped
- 2 tbsp honey
- 4 tbsp dark soy sauce
- Zest and juice of a lime
- Small piece ginger, peeled and chopped
For the noodles
- 1 tbsp sesame oil
- Finely sliced onions, peppers, carrots and mange tout
- Cooked noodles
- Juice of a lime
- Fresh coriander leaves
- Toasted sesame seeds for serving
Method
Heat the oil in a pan and fry together the chlli, garlic and ginger for 2 minutes. Add in the soy sauce and honey and cook for a further minute or so till thickened. Meanwhile, quickly panfry the salmon fillets on both sides then pour over the prepared teriyaki sauce. To prepare the noodles, heat a wok with the sesame oil and quickly fry the spring onions, carrot, peppers and mange tout for a minute. Add in the cooked noodles juice of a lime and coriander leaves and serve with the teriyaki salmon sprinkled with toasted sesame seeds.
