Protein salad with tuna, grilled chicken and smoked mozzarella

Serves: 2

Ingredients

  • 1 chicken breast, sliced in half
  • 2 cloves garlic
  • 2 sprigs fresh thyme
  • Fresh seasoning
  • 1 ball smoked mozzarella, thickly sliced
  • 2 small tins tuna in oil, drained
  • 2 handfuls mixed salad leaves
  • 3 tbsp Extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1tsp Dijon mustard
  • 3 hard boiled eggs, halved
  • 4 wooden skewers
 

Method

Start this recipe with the chicken. Heat a little olive oil in a pan. Season the chicken breast slices with salt and pepper and place into the hot pan with the thyme sprigs and whole cloves of garlic. Cook for a few minutes on each side. When ready, remove from the pan and allow to sit for 2 minutes. Meanwhile, mix together the olive oil, balsamic and mustard and season well with salt and pepper. Place the salad leaves in a large bowl and toss in the dressing. Serve the salad into 2 deep serving bowls. Tip in the tuna on 1 side of each bowl, followed by 3 boiled egg halves in another corner. To finish, cut the cooked chicken into squares, then thread pieces of chicken and smoked mozzarella onto the skewers. Place the skewers on top of the salad and serve.

• 1 sidra tat-tiġieġ maqsuma fi tnejn • 2 sinniet tewm • 2 biċċiet sagħtar frisk • Ħwawar friski • 1 ballun mozzarella iffumigata, imqatta’ f’biċċiet ħoxnin • 2 laned żgħar tat-tonn taż-żejt imsaffija • 2 ponnijiet weraq imħallat tal-insalata • 3 mgħaref żejt taż-żebbuġa extra virgin • 1 mgħarfa ħall balsamiku • 1 kuċċarina mustarda Dijon • 3 bajdiet ibsin maqsuma min-nofs • 4 stikek tal-injam

Method

Ibda billi tlesti t-tiġieġ. Saħħan ftit żejt taż-żebbuġa f’taġen. Ħawwar il-biċċiet tat-tiġieġ bil-bżar u l-melħ u sajjarhom mas-sagħtar u s-sinniet sħaħ tat-tewm. Sajjar għal ftit minuti fuq kull naħa. Meta jkunu lesti, neħħihom mit-taġen u ħallihom joqogħdu għal 2 minuti. Sadattant, ħallat flimkien iż-żejt taż-żebbuġa, il-ħall balsamiku u l-mustarda u ħawwar tajjeb bil-bżar u l-melħ. Poġġi l-weraq tal-insalata fi skutella kbira, itfa’ t-taħwira u ħawwad. Servi l-insalata f’żewġ platti fondi. Itfa’ t-tonn taż-żejt fuq naħa waħda tal-platt u tliet nofsijiet bajd iebes f’ġenb ieħor. Imbagħad, qatta’ l-isdra tat-tiġieġ f’dadi u daħħalhom fl-istikek tal-injam mal-blalen tal-mozzarella. Poġġihom fil-wiċċ u servi.
