Cranberry and nut oat bars

Serves: 10

Ingredients

  • 200g dried pitted dates
  • 80g peanut butter
  • 40g butter
  • 120g oat flakes
  • 200g mixed nuts (almonds, walnuts, cashew nuts)
  • 100g dried cranberries
  • 1 tsp vanilla essence

Method

Start this recipe by toasting the oat flakes and nuts for a 4-5 minutes in the oven on baking trays, then allow to cool. Next, soak the pitted dates for 5 minutes in hot water to soften. Discard the water and place into a food processor and pulse to a sticky paste. Heat the butters in a saucepan or microwave till slightly runny. Next, place all the ingredients together in a large bowl (date paste, toasted oats, nuts , cranberries, vanilla essence and peanut butter)and mix together well. Press the mixture into a tin lined with baking paper and even out. Place into the freezer for 20 minutes to set before cutting into bars.
