No fat and no egg zucchini brownies

Serves: 15

Ingredients

  • 100g apple sauce
  • 2 bananas, mashed
  • 300g caster sugar
  • 2 tsp vanilla essence
  • 60g cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 400g grated zucchini
  • 240g plain flour
  • 100g walnut pieces

Method

Start by lining a 24cm x 30cm with baking paper and put aside. In a bowl, mix together the apple sauce, banana, sugar, vanilla, cocoa, baking powder and salt. Continue by folding in the zucchini, flour and walnuts and spoon into the prepared baking tin. Level out and bake in the oven at 200`c for 30 minutes. Allow to cool slightly before cutting into squares and serving.
