Chickpea felafel patties with pitta bread and tahini dressing

Serves: 4

Ingredients

  • 2 x 400g can chickpeas
  • 1 small onion, finely chopped
  • 2 tbsp parsley, chopped
  • 1 carrot, grated
  • 4 cloves garlic, chopped
  • 4 tbsp chickpea flour
  • 1 tbsp tahini paste
  • 1 tsp sweet paprika
  • 1 tsp caraway seeds, ground
  • Olive oil for frying (Basso)

You will also need

  • 1 tbsp tahini paste
  • 3 tbsp natural yogurt
  • Squeeze of lemon juice
  • Salad leaves and pitta bread for serving

Method

Start this recipe by draining the chickpeas and rinse under water. Place in a food processor and blitz to a paste. Add in all the remaining ingredients and blend together. Divide the mixture and form into patties. Heat a little olive oil in a large pan and fry the falafel patties on both sides until golden. Meanwhile mix together the remaining tablespoon of tahini, natural yogurt and a squeeze of lemon juice. Serve the patties with a salad, or inside warmed pitta bread with salad and drizzled with the tahini dressing.
