Honey glazed beef with spinach and oyster mushrooms

Serves:

Ingredients

  • 500g whole sirloin of beef
  • 2 tbsp mixed spice
  • 1 tbsp sweet paprika
  • 1 tbsp cinnamon
  • 1 tsp chilli flakes
  • 100ml oyster sauce
  • 2 tbsp garlic flakes
  • 3 tbsp honey

Dipping sauce

  • 1 onion
  • 3 cloves garlic
  • 1/2 glass wine
  • 150g tomato pulp

Condiments

  • 150g oyster mushrooms
  • Bunch spinach
  • Knob butter
  • i large potato

Method

Mix well the mixed spice, paprika, cinnamon, chilly, garlic and oyster sauce and rub well the beef, seal well from all sides on a sauté pan and place on an oven tray, drizzle with honey and roast at 180`c. Using the same pan sauté the diced onion and chopped garlic in butter until browned, pour in wine, pulp and simmer until reduced by half. Once beef is cooked remove from oven and add the juices left in the dish to the sauce. Next, slice the mushrooms roughly and sauté in butter until softened, add spinach season toss and remove from heat. Slice the potatoes in thin slices and fry until crispy.
