Spicy braised chicken

Serves: 4

Ingredients

  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp cinnamon
  • 1 pinch cayenne pepper
  • Sea salt
  • Fresh cracked pepper
  • 1 whole chicken, jointed into 8 pieces
  • 1 onion, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 1 tbsp fresh grated ginger
  • 1 small glass white wine
  • 2 tbsp tomato paste
  • 1 hand full dried apricots
  • 100g kalamata olives
  • 1 small can chickpeas
  • 1 can tomato polpa
  • 300ml chicken stock (Star brodi)
  • 1 bay leaf
  • 1 tbsp honey
  • Fresh mint and coriander
  • Olive oil
  • Butter for cooking

Method

Mix together all the spices. Roll the chicken pieces with the seasoning spices and allow to mature in a refrigerator for at least 2 hours. Shallow fry the chicken pieces until golden, set aside and add the onion, garlic and ginger to the pan. Brown for a few minutes, stir in the tomato paste and the wine, allow evaporation. Add the chicken pieces to the pan and cover with the chicken stock. Add the apricots, olives, chick peas, bay leaf and honey and simmer for 45 minutes. Serve the chicken sprinkled with mint and coriander leaves.
